Abstract

Coffee of salak  seeds is an innovation in coffee. This product is not popular yet in society. Thus, market testing of this product is needed. The attributes that have been tested in this research are aroma, acidity, body, flavor, aftertaste, sweetness, conformance, aesthetic, and innovation. This research uses the importance-performance analysis (IPA) and also customer satisfaction index (CSI). Result shows that there is one attribute that has to be kept the good work, which is the body of coffee, while attribute aftertaste, sweetness, and innovative are considered to have a higher performance that its importance. Flavor and aesthetics of the coffee are considered to be in low priority. Their performances are not good enough but the
society think that the two attributes are not too important. The attributes that need a high concern and top priority are aroma, acidity, and conformance because they are considered to have a high importance but their performances are not good. CSI analysis shows that society’s index of satisfaction to coffee of snakefruit’s seeds
is 75.35% which is considered as satisfy.
